Truffled Burger Patty (Veg)

Ingredients

  • 1 can (420 grams) black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons TRUFFLE OIL (WHITE or BLACK according to preference)
  • 1 tablespoon soy sauce or tamari (for umami flavour)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • Olive oil (for cooking)

Instructions

Prepare Ingredients:

  • In a large bowl, mash the black beans with a fork or potato masher until mostly smooth but with some texture remaining.
  • Add cooked quinoa, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, truffle oil, soy sauce, Dijon mustard, smoked paprika, salt, and black pepper to the mashed black beans.

Mix Thoroughly:

  • Mix all the ingredients together until well combined. The mixture should be cohesive enough to form patties. If it’s too wet, add more breadcrumbs; if it’s too dry, you can add a little water.

Shape the Patties:

  • Divide the mixture into equal portions and shape them into burger patties. You can make them as thick or as thin as you prefer.

Cook the Patties:

  • Heat a skillet over medium heat and add a little olive oil. Cook the patties for 3-4 minutes on each side or until they are golden brown and cooked through.

Serve:

  • Serve the truffle vegetarian burger patties on your favourite buns and add your desired toppings such as lettuce, tomato, onion, and condiments.

Optional: Additional Toppings:

  • For an extra truffle kick, you can drizzle a little more truffle oil on the cooked patties before serving.
