Ingredients
- 1 can (420 grams) black beans, drained and rinsed
- 1 cup cooked quinoa
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 2 tablespoons TRUFFLE OIL (WHITE or BLACK according to preference)
- 1 tablespoon soy sauce or tamari (for umami flavour)
- 1 teaspoon Dijon mustard
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
- Olive oil (for cooking)
Instructions
Prepare Ingredients:
- In a large bowl, mash the black beans with a fork or potato masher until mostly smooth but with some texture remaining.
- Add cooked quinoa, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, truffle oil, soy sauce, Dijon mustard, smoked paprika, salt, and black pepper to the mashed black beans.
Mix Thoroughly:
- Mix all the ingredients together until well combined. The mixture should be cohesive enough to form patties. If it’s too wet, add more breadcrumbs; if it’s too dry, you can add a little water.
Shape the Patties:
- Divide the mixture into equal portions and shape them into burger patties. You can make them as thick or as thin as you prefer.
Cook the Patties:
- Heat a skillet over medium heat and add a little olive oil. Cook the patties for 3-4 minutes on each side or until they are golden brown and cooked through.
Serve:
- Serve the truffle vegetarian burger patties on your favourite buns and add your desired toppings such as lettuce, tomato, onion, and condiments.
Optional: Additional Toppings:
- For an extra truffle kick, you can drizzle a little more truffle oil on the cooked patties before serving.
