Truffle Mac & Cheese

Ingredients

 

  • 225 grams elbow macaroni or your favourite pasta
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Gruyère or Swiss cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 1-2 tablespoons TRUFFLE OIL (WHITE or BLACK according to preference)
    Salt and black pepper, to taste
  • 1/2 cup breadcrumbs (optional, for topping)
  • Chopped fresh parsley, for garnish (optional)

Instructions

Cook the Pasta:

  • Cook the macaroni or pasta according to the package instructions until al dente. Drain and set aside.

Make the Cheese Sauce:

  • In a large saucepan, melt the butter over medium heat. Add the flour and whisk continuously to create a roux. Cook for 1-2 minutes until it becomes golden but not brown.
  • Gradually pour in the whole milk, whisking constantly to avoid lumps. Continue cooking and stirring until the mixture thickens.

Add Cheeses:

  • Reduce the heat to low, and add the shredded cheddar, Gruyère (or Swiss), and Parmesan cheese to the sauce. Stir until the cheeses are melted and the sauce is smooth.

Season and Add Truffle Oil:

  • Season the cheese sauce with salt and black pepper to taste. Stir in the truffle oil, starting with a smaller amount and adjusting to your preference.

Combine with Pasta:

  • Add the cooked pasta to the cheese sauce, tossing until the pasta is well-coated.

Optional Topping:

  • If desired, transfer the mac and cheese to a baking dish, sprinkle breadcrumbs on top, and broil for a few minutes until golden brown.

Garnish and Serve:

  • Garnish the truffle mac and cheese with chopped fresh parsley if desired. Serve hot.
